Plants instead produce chemical substances (called phytonutrients) to protect themselves, antioxidants, as most important.

There is a process of antioxidant activity, such as searching for free radicals (chemicals created by sunlight the leaves of plants). Antioxidants attack free radicals in cells and can kill them, resulting in plants with age and sometimes catch diseases. Free radical activity of antioxidants is limited. Since antioxidants are present in large numbers in the white-tea plants, it takes a lot to keep the balance of the plants are alive, because this battle continues.

There are many antioxidants in this tea contains mainly catechins family, including epicatechin, epigallocatechin and epikatehingallat. EGCG or epigallocatechin gallate, is the most famous antioxidant. Almost half of the antioxidant EGCG and consists of a very powerful component.
